An apple drink obtained by fermenting apple juice, the water content of which has been intentionally reduced through cryoconcentration, by being specially left to freeze in an ice chamber in which the temperature ranges from -8 to -15 degrees in order to remove ice water crystals.
The goal is to naturally increase the sugar content and get a sugar content between 35-40 brix. The must is then fermented slowly to become a golden iced drink in which you taste equal parts fresh apple, acidity, warm autumn sweetness and homemade apple jam.
There is a higher alcohol content here compared to cider made using traditional methods.
The taste is semi-sweet, and it is possible that champagne may appear at a later stage during bottle aging, due to its sweetening with cryo apple juice, stabilization only with cold, gentle sulfitising and filtration, and the lack of pasteurization in order to preserve the naturalness of the unique aftertaste of indriche, cloves, and jasmine.
This apple drink is an excellent appetite stimulant, which is why it would be a great aperitif, but also a good end to the evening, which is why it also combines well with light appetizers such as cheese platters, meats, and airy fruit and vegetable salads.
It harmonizes perfectly with low-fat cheeses, such as Camembert and Cheddar, as well as with desserts, delicate pastries filled with raspberries, berries and cherries, ice cream cake, apple pie, strudel and tartlets. If you choose it as the main course for the evening, you can combine it with grilled meat, chicken, duck and baked quail.
